2 large boneless chicken breast cut into bite sized pieces
3 cups instant mashed potato flakes
1/2 cup cornstarch
1/2 cup milk
1 cup hot sauce
1 1/2 tsp garlic powder
1 tsp.onion powder
1 tsp. cayenne pepper
salt to taste
heat oil in cast iron skillet.in mixing bowl add egg,milk and hot sauce.season chicken with spices.dip into egg mixture.place onto dish.mix mashed potato flakes and cornstarch. coat chicken pieces with batter.place in hot oil fry until browned and crisp.drain onto paper towel.
makes 3-4 servings
*note large pieces of chicken cannot be fried in batter.potato flakes and cornstarch cooks faster than flour.
